Kate Edwards and Charlotte Eve from have been teaching pizza lovers the art of building their own affordable and sculptural outdoor wood fired ovens for nearly 15 years. Thousands of people have enjoyed their fun and energetic tuition and mouthwatering wood fired pizza lunches on their one day pizza oven workshops.
Kate shows you how to build your own oven using cob – a mix of sand, clay and straw. It’s the original way of building a wood fired oven; the cheapest and greenest way of doing it; and Kate and Charlotte believe they cook the best pizza too. And to top it off, cob is so easy to work with it means anyone can build their own oven. The sculptural qualities of cob mean you can design bespoke ovens that are also a work of art in your garden.
The workshop day starts with coffee and tea sat in the glorious hills just outside Lyme Regis, just a mile from Lyme Bay, at the world renowned Monkton Wyld Court – centre for sustainable educaiton. After Kate shows you how to light an already existing pizza oven she kicks off with some basic theory about cob and gives you a brief introduction to cob buildings in the UK and globally. Then its time to start making some cob. You will learn to mix roughly 75% sandy sub-soil with about 25% clay and do the ‘cob dance’. You will be shown tests that will help you assess whether you have the correct mix or not. It’s seriously easy though – you can’t go far wrong. Then we build a sand former for the oven, talk you through how to build your base and then it’s time for the best bit – lunch!
Charlotte has been working on creating the perfect pizza for many years and you can look forward to an exceptionally tasty wood fired lunch! You will be shown how to cook in an oven and Kate talks you through the different types of heat which are creating hopefully the best pizza you’ve ever eaten!
Then it’s back to building. Together you will all sculpt your cob oven around the sand dome. You’ll have fun decorating the sculpting the oven too once you’ve built the main two layered structure (the first layer has no straw but the second layer does to provide insulation). Then you cut out the door, pull out the sand and stand back and marvel at your work.
Next is the second best part of the day – Charlotte’s homemade freshly baked cakes and more teas and coffees. Kate talks you through the whole process again and there’s lots of time to ask questions.
Everyone should leave the pizza oven building workshop feeling confident and ready to build their own pizza oven easily. Materials will set you back almost nothing – just the cost of a few fire bricks for the base of the oven. It’s a seriously cheap way of getting the best outdoor oven possible. And the workshops are always memorable and fun days out.
